The Easiest Homemade Mac-n-Cheese

Don’t you want to make the easiest homemade mac-n-cheese for those times other than holidays and special occasions? I know I do! When the cravings call, you can mix up this simple version and have it ready in less than an hour. You won’t believe how delicious it is!

Admittedly I make this decadent creamy macaroni and cheese for holidays. But this recipe is still good enough to serve dinner guests and family. What’s more, it’s a lighter version. I use whole wheat pasta, and light ingredients where I can. You don’t want to scrimp on the cheese itself, though.

Thanks goodness my kids finally see the difference in REAL macaroni and cheese vs. the boxed stuff, and they give this one two thumbs up. I really hope you’ll give it a try too!

Easiest Homemade Mac-n-Cheese

  • 1 box {12 oz} Elbow macaroni – I always use whole wheat
  • 1  1/2 cup {8 oz} Light sour cream
  • 1  1/2 cup Light mayonnaise
  • 4 cups {16 oz} shredded cheddar cheese
  • Any brand cheesy crackers {Cheese Nips}, crushed – amount will vary, as it’s used for topping

Cook pasta al dente, according to box directions. Drain and set aside.

In a large bowl, combine sour cream and mayonnaise. Add pasta and mix well.

Add cheese and combine until everything is evenly integrated.

Pour mixture into large baking dish, and sprinkle crushed cheese crackers over the top.

Bake at 350 degrees for 30 minutes, and serve.

TIP 1: You can use either regular cheddar cheese and cheddar crackers for this OR white cheddar cheese and white cheddar crackers {as I’ve used here}.

TIP 2: Cook these in individual crocks for a really cute and personalized presentation!

For a more casual night just serve it up family style!…

    Mac N Cheese is definitely my favorite comfort food. I love how you used ramekins, a good way to serve them individually!
