White Bean, Chicken & Sausage Chili (Slow Cooker)
Slow cooker white bean chili with ground sausage and chicken is a crowd favorite! Spicy sausage gives balance to the chicken, white beans, and corn for a flavor packed meal that’s ideal for casual get-togethers at home. Make a big batch and serve it for game day, add it to a chili bar, or make it part of a soup-themed dinner party.
This delicious main dish recipe has 2 kinds of meat for a deeper flavor profile. Two types of white beans give it more texture and heartiness. It also includes corn, diced green chiles and white chili seasoning.
Slow Cooker White Chili
If you love using your Crock Pot for fall or winter meals, this white chili hits the spot! It’s a great recipe for feeding overnight guests, or adding to a game day party.

Ingredients
- Lean ground chicken or turkey. Choose ground meat that’s not too fatty.
- Sausage. I prefer hot breakfast sausage for this recipe, but you can use regular flavor too. There are even some low fat varieties that work great.
- Onion. White or yellow onion is standard, but you can use sweet onion too.
- White beans. Drain and rinse a can of cannellini beans. You can also use pinto beans if you like.
- Garbanzo beans. Drain and rinse a can of garbanzo beans or chickpeas.
- Yellow corn. Use a can of yellow corn and drain or use frozen corn if you don’t have canned corn.
- Green chilies. Use canned green chilies or chop some fresh ones if you like more heat.
- White chili seasoning. Select your favorite brand of white chili seasoning mix or make your own with cumin, oregano, garlic powder, salt, and pepper. I also use low-sodium varieties when I cook with seasoning packets. I’ve never noticed any difference in flavor but the salt content is less.
How to Make It
- Cook the ground meats and diced onion together on the stovetop, until no longer pink. Drain it and add to the crock pot.
- Add the rest of the ingredients, place the lid on and cook on low for 8 hours.
Storage
You can store this chili in an airtight container and keep it in the fridge for up to 5 days or in the freezer for up to 2 months.
Serving Suggestions
- Add fresh baked sour dough or french bread with dipping oil.
- Add a beet and goat cheese salad for freshness and a well-rounded meal. Other salad options for fall and winter are fig and spinach salad or butternut squash and baby kale salad.
- Serve bowls of sour cream, shredded cheese, and fresh cilantro on the side so guests can top their chili with it.
- For a fabulous dessert, serve berry galette or rustic apple galette.

White Bean, Chicken and Sausage Chili
This Slow Cooker White Chili is a delicious fall or winter meal, and a perfect recipe for casual entertaining. Make a batch and serve for game day or add to a chili bar with tippings.
Ingredients
- 1 pound lean ground chicken (or turkey)
- 1 pound hot sausage
- 1 medium onion, chopped
- 1 (15 oz) can white beans (cannellini), drained and rinsed
- 1 (15 oz) can garbanzo beans, drained and rinsed
- 1 (15 oz) can yellow corn, drained
- 1 (4 oz) can green chilies
- 2 packets white chili seasoning pouch
Instructions
- Cook the ground chicken and sausage over medium-low heat, breaking it up as it cooks through.
- Add chopped onion so it can cook with the meat. Drain and add to a slow cooker.
- Add beans, corn, chilies, flavoring packets, and 3 cups water.
- Place lid on top and cook on Low for 7 to 8 hours, or on High for 4-6 hours.
Notes
Alternatively, you can add the raw chicken and sausage to the slow cooker, along with the other ingredients and mix it up well by hand. Cook it as directed.
This will render a chili with a much finer texture in the meats, but saves the pre-cooking step.
