White Bean, Chicken & Sausage Chili (Slow Cooker)

Slow cooker white bean chili with ground sausage and chicken is a crowd favorite! Spicy sausage adds a kick to this protein packed meal, and it’s ideal for fall and winter gatherings with friends or family. Make a big batch and serve it for game day, add it to a chili bar, or make it part of a soup-themed dinner party.

Using your Crock Pot for easy meals makes entertaining so easy, and this white chili is hot and hearty on a cold day! Make it to feed overnight guests, or for a game day party. With 2 kinds of meat and two types of white beans there’s plenty of flavor and texture to go around.

It’s a great idea for a winter dinner party or guys night. I included this in my tailgate party ideas with a cute serving suggestion using upcycled cans for easy travel. 

Prep time is minimal with mostly hands-off time while the meat cooks, and you can serve a larger crowd if you double or triple the recipe.

Ingredient Notes

  • Ground chicken. While chicken is the traditional choice, I often use ground turkey. Look for lean varieties so less fat is rendered.
  • Sausage. I use Jimmy Dean hot breakfast sausage for this recipe, but you can use regular flavor too. There are even some low fat varieties that work great.
  • White beans. I use both cannellini beans and garbanzo beans for variety. You’ll drain and rinse them before adding. You can also use pinto beans if you like.
  • Yellow corn. Use a can of yellow corn, drained, or about 1½ cups of frozen corn.
  • White chili seasoning. Select your favorite brand of white chili seasoning mix or make your own with cumin, oregano, garlic powder, salt, and pepper. I love to use Carroll Shelby’s White Chicken Chili mix and leave out the cayenned pepper packet since I use hot sausage. You can use low-sodium varieties too; I’ve never noticed any difference in flavor but the salt content is less. 

How to Make It

  1. Cook the ground meats together on the stovetop, until no longer pink. Drain it and dab off the excess fat with a paper towel, and add to the crock pot.
  2. Add the rest of the ingredients, stir, place the lid on and cook on low for 6-8 hours or high for 5 hours.

Storage 

You can store this chili in an airtight container and keep it in the fridge for up to 5 days or in the freezer for up to 2 months.

Serving Suggestions

Add fresh baked sour dough bread or french bread with dipping oil. Or, serve it over a baked potato and top with cheese and sour cream.

Add a beet and goat cheese salad for freshness and a well-rounded meal. Other salad options for fall and winter are fig and spinach salad or butternut squash and baby kale salad.

Serve bowls of sour cream, shredded cheese, fresh chopped cilantro, and lime wedges on the side so guests can top their chili with it.

For a fabulous dessert, serve berry galette or rustic apple galette

White Bean, Chicken and Sausage Chili

This Slow Cooker White Chili is a delicious fall or winter meal, and a perfect recipe for casual entertaining. Make a batch and serve for game day or add to a chili bar with tippings.

Ingredients

  • 1 pound lean ground chicken (or turkey)
  • 1 pound hot sausage
  • 1 medium onion, chopped
  • 1 (15 oz) can white beans (cannellini), drained and rinsed
  • 1 (15 oz) can garbanzo beans, drained and rinsed
  • 1 (15 oz) can yellow corn, drained
  • 1 (4 oz) can green chilies
  • 2 packets (1.25 oz each) mild white chili seasoning pouch
  • 4 cups water

Instructions

  1. Break up the ground chicken and sausage and cook over medium-low heat until cooked through, stirring often to help break up the pieces.
  2. Drain the meats on a layer of paper towels and use another paper towel to pat all the excess oil off, then add it to the slow cooker.
  3. Add remaining ingredients and 4 cups of water.
  4. Place lid on top and cook on Low for 7 to 8 hours, or on High for 4-6 hours.

Notes

I recommend using one (3 oz) package of Carroll Shelby's White Chicken Chili mix, and omitting the cayenne pepper pouch.
