Overnight Bisquick Breakfast Casserole
Make-ahead Bisquick breakfast casserole is loaded with sausage, eggs and cheese, and is a crowd-pleaser at brunch parties. Prepare this the night before so its ready to bake and serve your guests in the morning.
When you need an easy breakfast or brunch recipe for get-togethers, this overnight casserole will save you time in the morning. Using Bisquick makes life easier, and haven’t we all grown up baking with this pre-made mix?
This recipe has sausage and eggs for a protein boost that helps fill you up, but the real magic comes from ingredients that add Tex-Mex flavor.

This casserole can be served to the family for breakfast, for overnight guests, or for a brunch party. It’s the perfect dish to serve during the holidays when you may feel like a bed and breakfast with all those visiting relatives!

Tips & Tricks
Never put a cold casserole dish into the hot oven. The extreme temperature change can shock the dish and break it.
If you’re feeding a crowd, make two casseroles. The recipe is easy to double.
Lean in to the Tex-Mex flavor and use Mexican chorizo instead of sausage, for a spicier option.
Lighten up the meat choice by using low fat sausage, chicken sausage, or turkey sausage.
Substitute the pepper-jack cheese with shredded cheddar, white cheddar, Swiss, or Asiago.
Serve a bowl of salsa or pico de gallo on the side for a delicious accouterments. I also like to sprinkle on a bit of fresh cilantro after baking.

Who doesn’t love a weekend brunch? It’s one of our favorite indulgences and is loads of fun. Here’s a well thought out menu to set up a breakfast buffet:
Start the party with a gorgeous brunch cheese board, and toast to the day with a Sriracha bloody Mary.
Every brunch needs something sweet. Add these homemade cinnamon muffins to round out the table, or simply purchase some cinnamon rolls or donuts.
Add stuffed strawberries and cream for something light and fresh. If you don’t have time to stuff them just serve the cream on the side and dip the strawberries and other fruit into it.
A pitcher of golden sparkling fruit punch takes the place of orange juice and can be used for mimosas. In addition, set up a coffee bar for entertaining.

Bisquick Overnight Breakfast Casserole
This overnight sausage egg casserole make brunch or breakfast entertaining easy to do. Just mix the ingredients the night before and pop it in the oven in the morning. It's ready in about an hour.
Ingredients
- 1 cup Bisquick baking mix
- 1 cup shredded Pepper-Jack cheese
- 2 cups milk
- 6 eggs, lightly beaten
- 1 pound bulk sausage
- 2 teaspoons chopped fresh cilantro
- 1 teaspoon ground mustard
- Garnish: pico de gallo and more chopped cilantro
Instructions
- Crumble and cook sausage in a large skillet, until cooked through. When complete, drain it on a paper towel to absorb excess oil.
- In a large bowl, stir together all ingredients until combined, and pour into a 2-quart baking dish that’s been sprayed with nonstick cooking spray.
- Cover and refrigerate for 8 hours, or overnight.
- Remove dish from refrigerator, uncover, and place into cold oven. Turn oven on to 350 degrees.
- Bake for about 1 hour or until knife inserted into the center comes out clean.
- Serve warm with salsa if you like.
Notes
Use low fat, turkey or chicken sausage in this recipe for a lighter option.
