When you need an easy breakfast or brunch recipe for get-togethers, this overnight casserole will save you time in the morning! Using Bisquick makes life easier, and haven’t we all grown up baking with this pre-made mix?

This recipe also has sausage and eggs for a protein boost that helps fill you up. But the real magic comes from ingredients that add Tex-Mex flavor.

How to Make Sausage Egg Casserole

Mix up this sausage breakfast casserole and refrigerate overnight. You’ll bake it in the morning for about an hour and then you’re ready to serve your guests. Here are the key steps.

  1. Crumble and cook sausage until cooked through. When complete, drain it on a paper towel to absorb excess oil.
  2. Combine all the ingredients together in a large mixing bowl. You only have one dish to clean!
  3. ​Pour mixture into a 2-quart baking dish. Use glass or ceramic for easiest cleanup. 
  4. Cover with aluminum foil and refrigerate for 8 hours or overnight.
  5. Take the casserole out of the refrigerator and place into a cold oven. Turn it on to 350 degrees.
  6. Bake for about an hour or until the center is cooked through. Insert a knife into the middle and make sure it comes out clean.
  7. Serve a bowl of salsa or pico de gallo on the side for a delicious accouterments. I also like to sprinkle a bit of fresh cilantro after baking {love that stuff!}. 

HOSTESS TIP: Never put a cold casserole dish into a hot oven. The extreme temperature change can shock the dish and break it.

Variations

  • Lean in to the Tex-Mex flavor and use Mexican chorizo instead of sausage, for a spicier option.
  • Lighten up the meat choice by using low fat sausage, chicken sausage, or turkey sausage. 
  • Substitute the pepper-jack cheese with shredded cheddar, white cheddar, Swiss, or Asiago.

Bisquick Overnight Breakfast Casserole

Yield: about 12 servings

This overnight sausage egg casserole make brunch or breakfast entertaining easy to do. Just mix the ingredients the night before and pop it in the oven in the morning. It's ready in about an hour.

Ingredients

  • 1 cup Bisquick
  • ​1 cup shredded Pepper-Jack cheese
  • 2 cups milk
  • 6 eggs, lightly beaten
  • 1 pound bulk sausage, cooked through
  • 2 teaspoons chopped fresh cilantro
  • 1 teaspoon ground mustard

Instructions

  1. Stir together all ingredients until combined, and pour into a 2 quart baking dish that’s been sprayed with nonstick cooking spray.
  2. Cover and refrigerate for 8 hours, or overnight.
  3. Remove dish from refrigerator, uncover, and place into cold oven. Turn oven on to 350 degrees.
  4. Bake for about 1 hour or until knife inserted into center comes out clean.
  5. Serve warm with salsa if you like.

Notes

Use low fat, turkey or chicken sausage in this recipe for a lighter option.
