The recipe was inspired by Taste of Home cookbook, but I adjusted it to make it easier for the busy hostess.

Ingredients

  • Refrigerated pie dough. Use the rolls that come in the tube. You’ll need one roll for this recipe, or double the ingredients and make two galettes.
  • Granny Smith apples. These work best because the tartness balances the sweet ingredients, plus they’re firm and cook to a great texture.
  • Granulated sugar.
  • Flour.
  • Egg. This is used for an egg wash that you’ll brush over the pastry before baking.
  • Cinnamon sugar. I used Gustus Vitae spicy chocolate cinnamon sugar to sprinkle on top but you can also use regular cinnamon sugar. Just combine 1 teaspoon of sugar with 1/4 teaspoon of ground cinnamon.
  • Caramel topping. Find this in the ice cream topping section of the store. You can also use salted caramel varieties for more flavor.

How to Make It

  1. Unroll the pie dough according to package directions.
  2. Peel and slice the apples.
  3. Combine the filling ingredients together and then place the apples on top of the dough, leaving a 2-inch border around the edge.
  4. Fold up the edges and brush with egg wash. Sprinkle with cinnamon sugar and bake.

Helpful Tips

  • Prepare the galette on parchment paper placed on a sheet pan. That way you can easily transfer it to the oven. Then after baking, you can slide the parchment off of the pan without disturbing the galette.
  • Don’t unroll the dough before it’s soft enough to do so. That will result in a broken dough. Begin by unrolling it slowly and if you start to feel resistance, let it sit a bit longer to continue to warm up and soften.
  • After it’s unrolled you can put it back in the fridge to chill if you need to. You don’t want to be working with overly soft dough.
  • Lightly flour your work surface to lay the pie dough on. This keeps it from sticking to the paper. You can also sprinkle a little bit of cornmeal to give extra flavor and crunch.
  • Serve with vanilla ice cream, whipped cream, or both!

Storage

This is fine to sit at room temperature for a day, but refrigerate if you have any left over after that. Always wrap or store in an airtight container.

  • 2 large granny smith apples, peeled and sliced thin
  • 3 Tablespoons sugar
  • 1 Tablespoon all-purpose flour

Topping

  • 1 large egg
  • 1 Tablespoon water
  • 1 teaspoon spicy chocolate cinnamon sugar (or substitute 1 teaspoon sugar + 1/4 teaspoon cinnamon, combined)
  • 2 Tablespoons caramel ice cream topping, at room temperature or warmed

Instructions

    1. Preheat oven to 400 degrees. Line baking sheet with parchment paper.
    2. Prepare and unroll pie dough according to package directions. Place dough on top of parchment paper on baking sheet.
