This week I’m sharing ideas and recipes for a great father’s day celebration at home. To begin, I’ve got a terrific burger recipe inspired by one I found in the grilling cookbook by Taste of Home. I changed it up a bit and created my special sun-dried tomato mayonnaise to top it with, and the result is this burger that’s very unique in flavor.

How can I describe these sun-dried tomato burgers to you?….The flavor is bold, and my best comparison is lasagna! Does that sound crazy? I’m a big fan of sun-dried tomatoes – I think the technique really brings out the sweetness in the tomato. The intensity of that flavor combined with the ground beef, and topped with the sun-dried tomato mayonnaise just reminds my taste buds of lasagna!

This is a great meal for dad on Sunday, or any casual get-together. Serve with my sweet & spicy baked beans or my classic potato salad if you like. Sun-dried Tomato Burgers

  • 1 1/2 pounds ground beef {80-90% lean}
  • 1 medium red onion
  • 1/3 cup crumbled feta cheese
  • 1/2 cup chopped sun-dried tomatoes {from oil-packed jar}; save remaining for my mayo recipe below
  • salt & pepper to taste
  • 6-8 ciabatta rolls

Cut onion in half; finely chop one half and thinly slice the other half for later.

In a bowl combine ground beef, chopped onion, feta, tomatoes, and salt & pepper. Mix well and form into 6-8 patties, depending on how big you want your burgers.

Grill burgers over medium heat, with grill cover closed, for 5-7 minutes EACH side; or until juices run clear.

Serve burgers on ciabatta rolls with lettuce and sliced onion. Top with my sun-dried tomato mayonnaise recipe.

Sun-dried Tomato Mayonnaise

Combine equal parts chopped sun-dried tomatoes and mayonnaise in a food processor or blender, and pulse until thoroughly combined.
