Oven Roasted Potatoes For Easy Entertaining
This is my go-to recipe for roasted potatoes, and it’s the perfect side dish for almost any dinner party. The Parmesan-herb seasoning creates a flavorful crust, and cooking them in the oven makes this an easy option for hosting.

Almost nothing beats the potato when planning a dinner party side dish. Whether it’s a cold creamy potato salad or make-ahead mashed potatoes, it’s classic and satisfying. These oven-roasted potatoes are one of my favorite recipes for entertaining because they’re simple and easy to make, and they’re perfect every time.
You can cut and prep them about an hour before cooking, and then pop them in the oven when guests arrive; you’ll be ready to eat in about 20 minutes. The recipe calls for simple seasonings you already have in the pantry, plus grated parmesan cheese to give them a flavorful crust.


Simple Steps
All you do is cut the potatoes, toss them with the seasoning ingredients, and spread them onto a sheet pan to roast.
Helpful Tips
Use small red potatoes, or new potatoes cut into bite-size portions – halves or quarters depending on size.
After you cut the potatoes, let them sit at room temperature to dry out a bit. That will help reduce moisture so they cook up more crisp.
Ovens can vary. Pierce the largest potato to check for doneness. If it’s still too firm, add 5 to 10 more minutes of cooking.
Patatas Bravas Sauce
Turn these into a tapas style appetizer known as patatas bravas in Spain. Simply cook as directed and serve with this dipping sauce:
- ½ cup mayonnaise
- 1 teaspoon tomato paste
- ½ tablespoon red wine vinegar (or more to balance flavor)
- ¼ teaspoon smoked paprika
- ⅛ teaspoon garlic powder
- ⅛ teaspoon cayenne (or pinch to taste)
- Pinch of salt to taste
Mix and refrigerate for at least 2 hours to marry flavors.

Serving Suggestions
These roasted potatoes can be served for every meal from brunch to luncheons to appetizers.
For a dinner party menu, serve these with salmon in red pepper sauce or with pan seared filet in red wine sauce. Both entrees are “fancy” without being difficult to make.
Serve them with the bravas dipping sauce above, for a tapas and sangria party or happy hour. Add tomato bread and Spanish cheese and charcuterie for an authentic themed menu.
Serve for brunch or a luncheon along with chicken quiche or hot chicken salad.

Oven Roasted Potatoes recipe
Easy herb-seasoned small potatoes are cooked in the oven for the perfect hands-off side dish for entertaining.
Ingredients
- 3 pounds new potatoes, cut in half or quarters depending on the size (can also use baby Yukon gold)
- ¼ cup olive oil
- 2 Tablespoon grated Parmesan cheese
- 1-2 teaspoon salt (or to taste)
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon dried oregano
- ¼ teaspoon ground black pepper
Instructions
- Preheat the oven to 425º F and place the baking sheet in the oven to heat up.
- In a large mixing bowl combine the potatoes, oil and seasonings, tossing well to coat. Clean hands work best for this!
- Pour potatoes onto the heated pan, and arrange in a single layer with cut sides down.
- Bake for 20 minutes; you can stir halfway through if you like but it's not necessary.
Notes
To optimize crispness, allow the cut potatoes to sit and air dry before seasoning them to eliminate extra moisture.
PREP AHEAD: Use a large Ziplock bag instead of a bowl to combine the potatoes, oil and seasoning. Then you can store it in the fridge overnight and bake when ready. Take them out of the fridge about 30 minutes before cooking.
