Baked brie is always a crowd pleaser, but it’s even better when you dress it up and top it with a delicious mix of ingredients that complement the creamy buttery taste of the cheese!

I’ve been making these tried and true topping recipes for almost 20 years. They’re versatile enough to be served at brunch parties, for cocktail parties, or even dessert. 

PARTY TIP: Serve all 3 versions in a trio of mini baked brie rounds. Let guests choose their favorite!

1. Cranberry Pecan brie

The sweet and salty mix of the dried cranberries and chopped pecans is amazing, and you can prepare it ahead for easy entertaining. Use this topping to serve over a chilled cream cheese mold, too.

  • Dried cranberries or Craisins. You could substitute with dried cherries.
  • Chopped pecans, lightly toasted
  • Light brown sugar
  • Honey

Combine the ingredients EXCEPT the honey and pour onto brie. Then drizzle honey over top.

2. Honey Almond brie

This is so quick and simple to make that it’s great for a brunch menu. Just 2 ingredients is all you need to cover the baked brie.

  • Honey
  • Sliced almonds

Pour honey on brie AFTER BAKING it, and sprinkle the almonds on top.

3. Brown Sugar with Pecans brie

This one combines Kahlúa with the brown sugar and pecan mixture, and it’s positively drool worthy! It’s decadent and delicious enough to serve as a dessert! I guarantee you’ll be making it again and again.

The sugar melts and combines with the Kahlua and vanilla, and turns the brie into an irresistible appetizer. It’s also an excellent addition to a dessert cheese board.

  • Finely chopped pecans, or a package of pecan bits from the baking aisle
  • Vanilla extract
  • Kahlúa coffee liqueur
  • Brown sugar

How to Cook Brie Cheese

The best way to heat up brie is in the oven. You can place it on a parchment lined baking sheet or use a brie sized baking dish, ramekin, or mini skillet.

  1. Preheat the oven at 325º F and line a baking sheet with parchment paper, or use a baking dish or mini skillet.
  2. Thinly slice the top rind off the brie and discard. Place brie on the prepared baking sheet.
  3. Add toppings and bake for about 10 minutes or until heated through and melted.

PARTY TIP: Use the sides of the parchment paper to grab for easy transfer. Slide the paper along with the brie onto a serving tray and serve immediately.

Expert Tips

  • Cut the rind off the top. This makes it easier for guests to dip into the brie rather than have to slice through the skin. The outside rind acts as a wall to hold the cheese in, and stay warm longer.
  • Use small 8-ounce rounds of brie. For a larger 16-oz round, just double the ingredients for the toppings.
  • You can easily add more or less of an ingredient to suit your taste.
  • Combine the dry topping ingredients a day ahead so they’re ready to add when you’re ready to bake. Just keep them in an airtight container.
  • The brie will firm slightly as it cools, but that’s okay. You can actually mix the toppings into the hot brie, slightly, to help integrate it into every scoop.
  • You can substitute camembert cheese for the brie as it has a similar form and texture.

Variation

Wrap the wheel of brie in puff pastry and bake it. Simply follow the package directions on frozen puff pastry sheets. Thaw the pastry and wrap the brie so the seam side is on the bottom.

How to Serve Baked Brie

  • Serve the baked brie rounds right on a piece of parchment paper for a rustic presentation and easy cleanup. You can also use a round baking dish.
  • The best crackers to serve with brie are water crackers because they don’t interfere with the flavor of the cheese itself.
  • Other vessels include toasted baguette slices, apple and pear slices, pretzel crisps, Ritz crackers, artisan crisps, or grissini. You can also include sweet dippers like graham crackers or ginger snap cookies. 
  • Add a small knife or spoon to help scoop the brie onto the vessel.
  • Garnish with fresh herbs like rosemary, thyme, mint, or edible flowers.

FAQ’s

Do you take the rind off brie before baking?

The rind on the brie is edible but for easy serving and better flavor I suggest you cut the top off. That way people can dip right into it rather than having to slice through the outer layer, which is a bit tougher. The rest of the rind keeps the melted cheese intact.

What should I serve on top of brie?

Sweeter toppings are ideal like honey, jam, brown sugar, dried or fresh fruit, and crunchy elements like nuts. You can also incorporate savory toppers like sauteed mushrooms, caramelized onions, sun dried tomatoes, and pesto.

Ingredients

Cranberry-Pecan

  • 1 small round of brie
  • 3/4 cup dried cranberries or Craisins
  • 3/4 cup chopped pecans, lightly toasted
  • 3 Tablespoons light brown sugar
  • honey – about 1/4 cup

Honey-Almond

  • 1 small round of brie
  • about 1/4 cup Sliced almonds
  • about 1/4 cup honey

Kahlua-Pecan

  • 1 small round of brie
  • 1/3 cup chopped pecans
  • 1/2 teaspoon vanilla extract
  • 1/4 cup Kahlúa
  • 3 Tablespoons brown sugar

Instructions

  1. Preheat oven to 325 degrees.
  2. Thinly slice the top rind off of the brie and discard. Place brie on parchment paper-lined sheet pan so it’s easy to remove once baked.
  3. For cranberry-pecan brie, combine dry cranberries, pecans, and brown sugar in a small bowl. Sprinkle it over one of the brie rounds and drizzle honey over mixture.
  4. For honey-almond brie, pour honey over second brie round and sprinkle sliced almonds on top.
  5. For Kahlua topped brie, combine pecans, vanilla, Kahlúa and brown sugar together. Cover third brie round with mixture.
  6. Bake all three wheels of brie for 8-10 minutes or until heated through.
  7. Gently slide parchment with brie onto a serving tray and serve with crackers or French bread slices.
