Easy Breakfast Casserole Recipe

Every year we have overnight guests for the holidays.  When we host our Christmas cocktail party we have out -of-town friends who come and spend the night, and at Christmas my in-laws come and stay with us.   Breakfast has become an important part of entertaining – a necessity to soak up the cocktails from the night before, or our ritual brunch after opening gifts Christmas morning.  After years of playing the hostess, I’ve acquired a few go-to breakfast casserole recipes for these occasions.

I have to keep a few important factors in mind:  one friend doesn’t like “eggy” casseroles, all the men want something hearty and meaty, and I want something simple that I can put together the night before, place in the refrigerator, and put into the oven the next morning.  This breakfast casserole recipe fits all those criteria and it’s delicious too!

Easy Breakfast Casserole

  • 4 cups frozen shredded hashbrowns, thawed
  • 2 Tablespoons dried onion flakes
  • 1 package Canadian bacon slices {about 8 slices}, diced
  • 1 cup {4 oz} shredded cheddar cheese
  • 1 can {12 oz} fat free Evaporated Milk
  • 1 large egg
  • 1 1/2 teaspoons seasoned salt blend
  • PAM cooking spray

Preheat oven to 350 degrees.  Spray a 9 x 11 baking dish with PAM nonstick spray {makes clean up a breeze}.

Layer 1/2 of the potatoes, 1/2 onion flakes, 1/2 Canadian bacon, and 1/2 cheese in the dish.  Repeat layers.

In a small size bowl combine Evaporated milk, egg, and seasoned salt.  Pour over potato mixture and cover with aluminum foil.

Bake for 55 to 60 minutes.  Uncover and bake another 5 minutes.

Let stand for 10 minutes before serving.

HASSLE FREE HOSTESS TIP:  Prepare the casserole the night before and place in the refrigerator.  In the morning, put it in the oven and turn the oven on to heat up.  Cook as directed.  DO NOT put the cold dish into a heated oven or the dish can break.

Serve this with fresh fruit and yogurt for a well rounded breakfast {we even eat it for dinner on occasion}.

Another thing that we do sometimes, is leave a sticky note with directions, on top of the casserole so whoever wakes up first can put it in the oven.

  54. Do I have to use evaporated milk? Why evaporated milk? Can I substitute? Just wondering because I’ve never used that ingredient before and would like to try this casserole.

    • Melissa, the EM makes the dish more creamy and rich. Regular milk has a higher water content that will not give you the same results.
