Easy Cheeseburger Bake Casserole

I love one dish meals in the fall and winter. They’re comfort food and they make dinner prep easier while juggling schedules for school and activities.

Growing up in the South, we made casseroles for everything from potlucks and covered dish dinners, to supper for overnight guests or to take to new moms.

This one uses ground beef in a way other than burgers, meatloaf, Italian, or Mexican. It’s an easy casserole that’s like a cheeseburger in a single hot dish!

How to make Cheeseburger casserole with Bisquick

This main dish is a take on the classic Impossible Cheeseburger pie recipe. You can find many variations of the original.

This one gets more flavor and creaminess from the addition of cream cheese and seasoning added to the meat. It makes the ground beef particularly flavorful!

  1. Cook ground beef and onions together in a skillet until cooked through. Drain any excess oil and return meat to hot pan.
  2. Break up the cream cheese into smaller pieces and add it with the ranch seasoning, to meat and combine until melted and creamy.
  3. Add meat mixture to the bottom of a 13 x 9 inch baking dish.
  4. Layer on the mushrooms and 1 1/2 cup of the cheese.
  5. Stir together Bisquick, milk, basil, pepper, and eggs until blended. Pour into baking dish.
  6. Bake 30 minutes in a preheated 400 degree oven, or until a pick inserted into the middle comes out clean.
  7. Sprinkle with remaining cheese and bake about 2 more minutes until cheese is melted.

Can I make it ahead?

Yes, this dish is nice and hearty and can be prepared ahead of time and kept in the refrigerator until ready to bake.

TIP: Never put a cold dish from the refrigerator straight into a hot oven. Put the dish into the oven and then turn it on so they heat up together. Bake as directed.

Can I freeze cheeseburger casserole?

Yes, you can freeze this after you bake it. Just let it cool completely and wrap it with a double layer of plastic wrap or aluminum foil. Freeze for up to 3 months.

Tips and Substitutions

Follow these suggestions for variations.

  • Use Swiss cheese instead of cheddar, or use a combination of the two.
  • Substitute fresh sliced mushrooms instead of canned or jarred.

Easy Cheeseburger Bake casserole

Yield: 6-8 servings

A comfort food casserole with seasoned ground beef, Bisquick, and cheese. This hot dish serves 6 to 8 people for a casual dinner party.

Ingredients

  • 1 1/2 pounds ground beef
  • 1/3 cup onion, diced
  • 8 ounces cream cheese, softened
  • 2 Tablespoons Ranch seasoning mix
  • 1 cup sliced mushrooms, drained
  • 3 cups shredded Swiss or cheddar cheese
  • 1 1/2 cups Bisquick
  • 1 1/2 cups milk
  • 1 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 4 eggs, lightly beaten

Instructions

  1. Preheat oven to 400 degrees.
  2. Cook ground beef and onions together in a skillet until cooked through. Drain excess oil if necessary.
  3. Return meat to pan and add cream cheese and ranch seasoning. Stir to melt cheese and combine until creamy.
  4. Spray a 13 x 9 inch baking dish with nonstick spray and add meat mixture to the bottom.
  5. Layer on the mushrooms and 1 1/2 cup of the cheese.
  6. Stir together Bisquick, milk, basil, pepper, and eggs until blended. Pour into baking dish.
  7. Bake 30 minutes or until a pick inserted into the middle comes out clean.
  8. Sprinkle with remaining cheese and bake about 2 more minutes until cheese is melted.
  9. Cool for about 5 minutes before serving.

Notes

Use ground turkey, chicken, or sausage as a substitute for the ground beef.
