Golden Graham S’mores Bars

These s’mores bars with Golden Grahams are a delicious treat you can make for parties and gatherings. They’re loaded with chunks of marshmallows and chocolate chips, in a crispy square. Add this easy dessert to casual gatherings, kids parties, or potluck get-togethers.

S’mores Bars

As the summer winds down and the evenings turn chilly, my favorite thing to do is sit in the backyard with the family gathered around a toasty fire. And of course, to make smores!

With these Golden Grahams bars you can have the yummy flavors of s’mores anytime, without having to build a roaring bonfire! I love the gooey marshmallows, the crispy, sweet graham crackers, and the delicious milk chocolate.

  • Easy to make. The formula is similar to Rice Krispies treats so you know it’s gonna be good! Plus, you can make them ahead and they’re easy to transport for a picnic or potluck party.
  • Delicious! They have a chewy, crispy, and gooey texture with traditional s’mores flavors.
  • Double or triple the recipe. You can easily scale up the recipe to make more bars for a crowd. Just double or triple the ingredients accordingly.
  • Crowd pleaser. They’re so good and perfect for afterschool snacks, late summer cookouts, bake sales, and tailgate parties!

Ingredients & Substitutions 

  • Milk chocolate chips. Select your favorite brand of chocolate chips or chocolate chunks. You can even use semi-sweet, dark, or white chips if you like the taste, or use peanut butter chips for a twist.
  • Butter. I always use unsalted butter but you could use either salted or unsalted for this.
  • Mini marshmallows. You’ll need the small ones so they mix in easily and the size is proportionate to the bars. If you only have large ones on hand you can cut them into smaller pieces.
  • Golden Grahams cereal. This gives you the graham cracker flavor. Try using Cinnamon Toast Crunch cereal for different spin.

How to Make Them

  1. Start by freezing the chocolate chips until needed.
  2. In a large microwave-safe bowl, melt the butter.
  3. Reserve 1 cup of marshmallows and add the rest to the butter. Microwave for 1 1/2 minutes, stirring until smooth.
  4. Stir in the cereal until evenly coated. Fold in the chocolate chips and the reserved marshmallows.
  5. Transfer the mixture to a greased (or use nonstick cooking spray) 9-inch square pan, or 9×13-inch baking dish, depending on how thick you want the bars. Press firmly and let them cool and set before cutting.

Golden Grahams S'mores Bars

Update the classic s'mores recipe using Golden Grahams cereal for a delicious twist. You'll love these dessert bars with chunks of mini marshmallows and chocolate pieces.

Ingredients

  • 1 (12-oz) bag milk chocolate chips
  • 4 Tablespoons butter
  • 1 (10.5-oz) bag mini marshmallows
  • 1 (12-oz) box Golden Grahams cereal

Instructions

  1. Freeze the chocolate chips for about 30 minutes or until needed.
  2. In a large microwave-safe bowl, melt the butter.
  3. Reserve 1 cup of marshmallows and add the rest to the butter. Microwave for 1 ½ minutes, stirring until smooth.
  4. Stir in the cereal and coat well. Stir in the chocolate chips and the reserved marshmallows.
  5. Transfer the mixture to a greased 9-inch or 9x13-inch baking pan, depending on how thick you want the bars. Press firmly and let them cool and set before cutting.

  1. These were great (not that I got any – they were gone by the time I had a break in the action). I made these for my son’s camping themed birthday party yesterday. We had record heat here in Denver and there was no way I was going to turn on the oven or grill. Everyone loved them. Thanks!

  2. This is exactly the recipe I have been looking for! All of the recipes have the chocolate completely melted or the marshmellows completely melted, and I wanted the chunky variety! This way is the best way so you can get all of the individual flavors.

    I was wondering if you think this would work as a crock pot recipe too? For when you’re busy cooking the rest of the party food 😉 Only problem would be how to keep the chocolate chips from melting all the way? Thank you so much for this!
