Now that school is back in full swing and life is a little more ‘structured,’ it’s time to plan ahead for those weeknight meals that will come together easily. I go through phases – sometimes I quite enjoy planning and cooking the family dinner, while other times I just don’t want to give it another thought. Whichever phase I’m in, homemade pizza is always a go-to meal. You can change up the toppings each time, and it’s easy when you start with a convenient pizza dough – Pillsbury is the one I’ve been grabbing forever.

We recently made our own bbq chicken pizza and decided to use Pillsbury’s new gluten free dough. Here are the delicious details…

BBQ Chicken Pizza

  • Pillsbury refrigerator thin crust pizza dough
  • 2 cups cooked, shredded chicken
  • Favorite bbq sauce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped red onion

Pre heat oven according to dough package directions. Roll out dough onto a round pan, using a rolling pin, and pre-cook the pizza dough.

Remove from oven and spread a thin layer of bbq sauce over crust. Toss together the chicken with about 1/4 cup of sauce, and then place on top of crust.

Add onion and cheese and bake according to pizza dough directions {about 15 minutes}.

Serves 4.

The new gluten free dough comes in a tub instead of the tube I’m used to. It’s a good idea to let the dough sit at room temperature for 10 or 15 minutes so that it rolls out easier. Make sure to roll it out very thinly and try to make the edges a little thicker than the middle.

As a family, we love pizza night and making our own feels much healthier than ordering out.  The kids love to get involved and help top them, and I think these toppings work better on thin crust pizza than ‘regular’ crust. I hope you’ll give it a try.
