Mediterranean Style Pizza on Flatbread
This Mediterranean flatbread pizza recipe is perfect for entertaining at home. Make it as an appetizer or as an entree for pizza night. It’s light and flavorful, and easy to make. Keep the ingredients on hand for last minute meals or party guests. Or include it as part of a Greek themed dinner party.
This past weekend we made some of the yummiest pizzas that I just had to share with you. We made these sort of Mediterranean style flat bread pizzas that were inspired by the ones we get from the pizzeria nearby. Part of what makes them so good is that there’s no “sauce” per say, but an olive oil base. The toppings are healthy and delicious and filling!
It all starts with these FlatOut flat bread wraps we buy regularly, that are kind of a super food in my opinion {only 90 calories, high in fiber, high in protein, and very low fat}. The recipe is below, but as with any pizza or “toppings” recipe there are no specific measurements. You just top it how you like it!
Mediterranean Flatbread Pizza
- FlatOut Flat bread wraps
- Shredded Chicken breast
- Artichoke hearts, cut into bite sized pieces
- Roasted red peppers, patted dry and sliced
- Onion, sliced and separated
- Shredded Parmesan cheese
Sauce:
- Extra Virgin Olive Oil
- 1 Crushed garlic clove
- dried oregano
Combine all 3 sauce ingredients and brush on to crust. Meanwhile, saute onion slightly if desired.
Top flat bread with chicken, artichokes, red peppers, onions, and Parmesan. Bake at 375 for about 10 minutes.
Slice and enjoy.
These pizzas get nice and crispy, which I love, and you can serve them for meals or sliced small as a snack or appetizer. We’ve also made “regular” pizza with these FlatOuts, topping with tomato sauce, turkey pepperoni, and shredded cheddar. Of course you can experiment with toppings as you like, but I just love the convenience of using these wraps as a base {No, this is not a sponsored post – I just love them}.
