Sugar & Spice Cupcakes

Do you ever wonder, “what will my kids remember about their childhood when they’re all grown up”? When I think back about mine, I always remember the simple things like being tickled by my dad until I couldn’t breathe, playing in the woods and fields that surrounded my childhood home in the country, and lots of other insignificant everyday moments. The thing is, those insignificant moments are anything but! In our modern society we spend so much time and money on ways we can make memories for our children {Disney trips, gigantic birthday parties, all the latest & greatest toys and activities} that I think we forget that the real moments they remember are much less ‘forced.’

This philosophy is why I was excited to team up with Hallmark to encourage you to celebrate the everyday moments. “We want to help you celebrate the moments that don’t happen every day, but could happen any day. You won’t receive an invitation to these moments. They aren’t on your calendar. But they’re the ones you’ll remember for years.” What an amazing sentiment, right!

One of the ways our extended family has always connected is through food, whether it’s family reunions or holidays, we always come together to eat! It’s only natural that I would choose to spend time with my daughter in the kitchen baking something yummy. She’s all about cupcakes and I’m all about sharing the moment together so it’s a win-win situation.

We made these sugar and spice cupcakes together, which are perfectly “seasoned for the season” with pumpkin pie spice added to the mix. Here’s the recipe:

Sugar & Spice Cupcakes

  • 1 box yellow cake mix
  • 1 – 16 oz container light sour cream
  • 1/4 cup butter, melted
  • 2 large eggs
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon almond extract
  • Cream Cheese Frosting {below}

Preheat oven to 350 degrees, and line a muffin pan with paper liners.

Beat together all ingredients {except frosting} at low speed until ingredients are moistened.

Increase speed to medium and beat for 2 minutes or until batter is smooth.

Scoop batter into cupcake liners, and fill half way up.

Bake for about 20 minutes or until a toothpick inserted comes out clean. Let cool before frosting.

Cream Cheese Frosting

  • 1 – 8 oz package cream cheese, softened
  • 1 cup butter, softened
  • 2 – 16 oz packages powdered sugar
  • 1 Tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Beat cream cheese and butter at medium speed until creamy.

Gradually add sugar and remaining ingredients while continuing to beat at low speed.

Increase speed to medium and beat until blended and smooth.

These cupcakes are moist and have a wonderful seasonal flavor. You could also use the batter to make a bundt cake or layer cake if you like.

I hope my daughter will look back and remember making things in the kitchen with mom. It’s a great way to bond and teach her a skill at the same time.
