I used this delicious pink lemonade cupcakes recipe to make these mini bundt cakes I served in a recent tea party design here. These are easy to make but they feel a little more dressed up than the usual cupcakes don’t you think!

I found the mini bundt cake pan and I just love how the cakes look. The pink icing drizzled on top makes it even easier to color coordinate to your party too! You can see how beautiful and sophisticated the mini bundt cakes look when decorated with white in this elegant holiday dessert party. I think they would look equally pretty when dressed in yellow icing!

For my little girls tea party I went with the pink lemonade flavoring to make these mini cakes because it’s such a child friendly and summery treat. Perfect for a tea party or birthday party.

An easy but delicious pink lemonade cupcakes recipe is used to make these mini bundt cakes. They look so cute for a tea party too.

Pink Lemonade Cupcakes

  • 1 box White Cake Mix
  • 3 egg whites
  • 1/3 cup vegetable oil
  • 3/4 cup pink lemonade frozen concentrate – thawed
  • 1/2 cup water
  • White Frosting
  • Red food coloring

Preheat oven to 325 degrees.

Combine cake mix with egg whites, oil, lemonade concentrate, and water, according to box directions.

Scoop batter into mini bundt cake pans that have been sprayed liberally with cooking spray.

Bake as directed on box, for cupcakes. Allow cakes to cool completely before frosting.

Tint icing with food coloring {1 drop at a time} until pink color is achieved. Microwave the icing in 30-second intervals until it is fully melted and smooth. Do not overheat.

Drizzle cakes with the icing using a spoon and a free-form pattern. Let cakes set up in the refrigerator until ready to serve.

  1. I think we would be great for gifts like the chocolate cake in the jars. How many do you get out of the bundt cakes and how much batter do you put in the pan.

      My pan makes 12 at a time and I put in just enough batter to cover the center point. I actually used the rest of the batter to make a cake layer for another project, so I would guess I could have gotten at least 24 mini cakes.
