Party Appetizer – Spicy Chicken Cups

You may not have noticed by all the sweets I post, but appetizers are actually my favorite ‘food group.’ I could live on appetizers for practically every meal! What’s not to love? They’re usually bite size, they pack a lot of flavor in a small portion, and you get VARIETY.

These spicy chicken cups are one my classic go-to appetizers when hosting a ladies night or a cocktail party. The cups are made from wonton wrappers, which can be used to serve so many fillings {I’ll share more in the future}. In fact a few years ago my friend and I were on a bit of a wonton kick as we brought these little cups with a different filling to every function for several months.

Spicy Chicken Cups Appetizers

To Make Wonton Cups You’ll need:

  • 1 pack wonton wrappers {about 36 wrappers}, available in the produce section
  • mini muffin tin
  • non-stick spray

Begin by spraying the muffin tin cups with non-stick spray.

The wrappers are square so you want to form them into the mini muffin cups very gently to prevent tearing them. The outer edges overlapping is normal.

Once all the wrappers are in place, spray them with more non-stick spray.

Cover loosely with aluminum foil {no need to fold down the edges of the foil} and place in a pre-heated oven at 350 degrees. Cook for 7 to 9 minutes.

Spicy Chicken Filling:

  • 1 cup cooked shredded chicken
  • 1 cup roasted red peppers, patted dry and chopped
  • 1 1/4cup chipotle salsa – drain excess liquid
  • 1/2 cup diced green onions
  • 1 1/2 cup shredded Monterey Jack/Cheddar cheese blend

Combine all ingredients until well blended.

Spoon into prepared wonton cups, cover with foil, and bake another 8-10 minutes.

TIPS – The foil helps prevent over-browning of the wontons.

You can freeze unused {cooked} wonton cups to use later. Just place them in a zip lock freezer bag and put them in the freezer.

Don’t let the word “spicy” scare you.  They’re not THAT hot…they’re just right.

We enjoyed these with a bottle of Madria Sangria Moscato that was sent to me to try out. The sweet fruitiness of the sangria complements the spiciness of the appetizers beautifully. The sangria has a prominent peach flavor and the addition of sliced fruit {peaches and apples} made it seem like homemade! Yummm.
