We recently had a couple of friends over for a casual dinner and I served one of my favorite “Southern” recipes, hot chicken salad. I chose to make this as part of the Hellmann’s Chicken Change Up campaign to share a new twist on an old classic (cold chicken salad). This dish is easy to prepare and even the kids enjoyed it so it meets my criteria for excellence *wink*.

This recipe gives a unique spin on traditional chicken salad and since it’s baked it’s more hearty and filling.  Our guests loved it, my daughter loved the crunch inside, and served with a baguette and salad it makes a great meal for dinner or a luncheon. Get the recipe below and make it for your next gathering or weeknight meal.

Hot Chicken Salad

  • 2 cups cooked chicken breast, shredded
  • 1 cup diced celery
  • 3/4 cup slivered almonds, lightly toasted
  • 1/2 teaspoon white pepper
  • 1 Tablespoon lemon juice
  • 1 cup Hellman’s Light mayonnaise
  • 1 to 1 1/2 cups shredded parmesan cheese
  • 1 small can Fried onions

Preheat oven to 35o degrees, and spray a 9 x 11 baking dish with cooking spray.

Combine all ingredients together except the fried onions. Mix 1/2 the can into the mixture, reserving the rest for topping. Transfer to baking dish and cook for 20 minutes.

Top with remaining onions and cook for 5 more minutes. Serve with salad and crusty bread.

    You mentioned that you served this dish to company. How many people did you feed? The recipe doesn’t say how many it serves. Also, it says to serve with bread & a salad. However, that just doesn’t seem like enough of a “dinner” to feed my guests. What did you serve with this? Any suggestions for side dishes? Also, how would this be served on croissants? Thanks!

      Tammie, we had a couple over and with appetizer and dessert it was plenty. If I were to serve another side dish it would probably be steamed broccoli, but it’s really a personal preference. When serving 1 casserole-type dish I like to keep the rest of the food simple. I don’t know about a croissant, but I put it on the baguette and enjoyed it that way.
