Healthy Snack – Baked Crispy Garbanzo Beans

I’m always on the hunt for healthy snack options, and did you know that eating protein & fiber is one of the best ways to help maintain weight {it helps you feel full longer}! So when I ran across this idea several years ago in a magazine, I knew I had to try it. These baked garbanzo beans {chickpeas} cook up crispy outside with a tender interior. The bonus is that you get both protein & fiber in one snack!

These would also be a nice bar snack, along with nuts and olives, when entertaining. You may want to experiment with how crispy you like them. I find that the longer I let them dry out, the crispier they will bake up in the oven. I’ve also “twice baked” them before which led to a crispier center {I just followed directions below, stored them in the refrigerator overnight, and then baked them again the next day for about 8-10 minutes at 350}. Whether you like them tender in the middle or crispy, I hope you’ll give these a try.

Baked Garbanzos

  • 2 – 15 oz cans chickpeas
  • 2 Tablespoons all purpose flour
  • 1 teaspoon smoked paprika
  • 3 Tablespoons extra virgin olive oil

Preheat oven to 400 degrees.

Drain and rinse chickpeas and pat dry.

Add flour and paprika to chickpeas and toss to coat evenly.

Drizzle olive oil over chickpeas and toss to coat evenly. Spread chickpeas on a baking sheet, in a single layer.

Bake about 30 minutes or until outside is crispy and golden brown, and serve.

TIP: You can also sprinkle a little salt on them once you remove them from the oven, if you like.
