Wow, I am not in Chester anymore! Since moving to this side of Richmond – a more progressive area – I think I’ve gone through culture shock. I’m a Southern girl who’s always friendly, but we lived in small town Chester for 15 years where people just weren’t very outgoing or friendly. Seems like everyone was already from there so they didn’t need to be nice to strangers or outsiders.

Now that we live in Moseley, only 20 minutes away, it’s like a whole new world. People are friendly and chatty and helpful EVERYWHERE I go!! I have to compare it to college when all the New Yorkers and New Jersey natives came South for school and were shocked at how we Southerners would say “hi” to anyone we passed on the sidewalk.

Well, a couple of weeks ago I took my son to a bible school group in the neighborhood and as I’m dropping him off, you guessed it, people were friendly and chatting and introducing me to people and before I new it I met Darla, another local blogger who shares goodies and recipes on Sweet Dreams by Darla. After some shop talk I knew I wanted to introduce her and share one of her recipes with you guys.

She’s sharing her Gluten Free recipe for cheddar biscuits {like the ones you get at Red Lobster}, and I think it’s the perfect recipe to enter into Fall with, don’t you? Thanks to Korie Nordstrom for the pretty photos too!

From Darla: “Living gluten-free, I am always looking for fun and tasty recipes I can make enjoyable for my whole family. I’m the only one in my family that needs to eat wheat-free and making two of everything isn’t fun.

Well, on a recent trip to Pinterest, I found a recipe I had to try gluten-free! I love these round little biscuits based on the original recipe “Homemade Red Lobster Cheddar Bay” Biscuits by Reeni!! They are full of flavor and have none of that grainy texture so many gluten-free flour based goodies have. What a perfect addition to your gluten-free favorites! Enjoy this “sweet, no wheat” recipe.”

Gluten Free Cheddar Garlic Biscuits

To make, you’ll need the ingredients, a mixing large bowl, a flour sifter, a pastry blender, a small serving scoop, a large baking pan and a large piece of parchment paper. This recipe makes 1 ½ dozen biscuits.

  • 1 cup gluten-free pancake mix
  • 1 teaspoon baking powder
  • 1 teaspoon xanthium gum
  • A dash of salt and pepper
  • 2 garlic cloves, minced or chopped
  • 3 Tablespoons cold butter, cut into small cubes
  • 1 Tablespoon parsley
  • 1 cup shredded cheese
  • ½ cup milk or buttermilk
  • 1 teaspoon olive oil

Preheat oven to 400 degrees.

In a large bowl, sift and mix the pancake mix, baking powder, xanthium gum, and salt & pepper together.

Add garlic, butter, parsley, and cheese, and cut everything together using a pastry blender. Combine until it is in small pea-sized pieces.

Add milk and olive oil and use the pastry blender again to continue to mix all the ingredients until dough is thoroughly combined.

With a small scoop, place the round biscuits on a parchment paper-lined baking sheet.

Bake at 400˚ for 12-14 minutes.

Topping:

  • 3 Tablespoons butter
  • 1 garlic cloves, minced or chopped
  • 1 Tablespoon parsley
  • Sea salt, optional

While the biscuits are baking, mix the melted butter, garlic, parsley and sea salt together. When the biscuits are done baking, spoon butter over each one and enjoy! You won’t be able to eat just one!

* I’ve tried a couple different pancake mixes and Bisquick Gluten Free Pancake Mix definitely was my favorite. And remember, although all the ingredients in this recipe should naturally be gluten-free, always check labels for allergy warnings!
