Game Day Party Ideas + Cheesy Chorizo Dip Recipe

It may be 2 weeks until Christmas, but we still have football on the brain around here too. My husband is a Fantasy Football fanatic {plays in THREE leagues} so weekend days still involve game watching. Super Bowl is just around the corner too, so I teamed up with Velveeta & Rotel brands to share football party ideas with you, AND share my twist on their classic queso dip.

  • For a twist on the usual football party food, I like the idea of serving classic items in mini sizes. For instance stadium hot dogs become pigs in a blanket, pizza is made into bite sized rounds, fried chicken wings take the place of full size pieces, etc.

  • Serve up munchies in attractive disposable containers so guests can easily hold them in their lap or walk around. Popcorn bags, paper cones, even disposable mini baking pans are perfect vessels for munchies.

  • Provide a varied selection of beer or soda and place it in an ice filled bucket. Keep the bucket close by so the guys don’t have to get up and go to the kitchen when they need a refill.

  • Serve something sweet and simple. In my experience men love a classic chocolate cake which plays out well for a football party. It’s easy to cut a sheet cake into the shape of a football, cover it with chocolate frosting, and add “stitching” with decorator icing. {I made this for my husbands draft party and it disappeared in no time!}

  • Dips are the quintessential football party food, and this Velveeta-Rotel queso dip is a CLASSIC! I like to add a bit of Mexican Chorizo to it for some extra spice {and men always love more protein}, and a little cream cheese to thicken it and add a creaminess to it. Here’s my version:

Classic Queso Dip with a Kick

      • 1 lb. (16 oz.) VELVEETA®, cut into ½-inch cubes
      • 1 can (10 oz.) RO*TEL® Diced Tomatoes & Green Chilies, un-drained
      • 1 pound Mexican Chorizo sausage
      • 4 oz cream cheese, cut into 1/2 inch cubes

Remove Chorizo sausage from casings and cook over medium heat until cooked through. Drain excess fat and pat sausage with a paper towel to absorb remaining oil. Place all ingredients in a slow cooker and cook on low for about an hour, or until melted. Stir to combine all ingredients, and serve. TIP: The recipe easily doubles for a crowd!

Serve the dip with tortilla chips – I like to build it “nacho style” like you see below.  We also like to dip bread cubes into it like fondue!

    These are some great ideas! I’m having a huge blowout this weekend to celebrate the NFL’s final week of the regular season, and am inviting all my friends and coworkers at DISH. We wanted to change it up a little, and this is a perfect resource; especially that cheese dip! I’m getting a six-foot sub, pizzas, a giant veggie/dip platter, and a couple pony kegs. Also, I’m going to turn our giant basement room into the ultimate football paradise. With my DISH Hopper, I have three different TVs hooked up, one to each tuner, that will allow us to watch three different games at the same time in full HD! Thanks again for the tips!
