Easy Breakfast Casserole Recipe

This easy breakfast casserole recipe is a hostess’ dream. It goes together quickly, easily, and can be prepared ahead for weekend guests. Make this hearty and delicious recipe for brunch entertaining or when you’re hosting overnight guests. There’s no pre-cooking required. Just combine, cover, and cook. You can even make it for weeknight dinner too!

We have overnight guests throughout the year and for the holidays. When we host our Christmas cocktail party we have out-of-town friends who come and spend the night. And my in-laws come and stay with us at holidays. Breakfast has become an important part of entertaining!

Brunch is a necessity to soak up the cocktails from the night before. It’s a leisurely way to ring in the weekend. And it’s our ritual after opening gifts Christmas morning. After years of playing the hostess, I’ve acquired a few go-to morning casserole recipes for these occasions.

I have to keep a few important factors in mind when making a breakfast dish. One friend doesn’t like “egg-y” casseroles. All the men want something hearty and meaty. I just want something simple that I can put together the night before, place in the refrigerator, and put into the oven the next morning. This breakfast casserole recipe fits all those criteria and it’s delicious too!

HASSLE FREE HOSTESS TIP:  Prepare the casserole the night before and place in the refrigerator.  In the morning, put it in the oven and turn the oven on to heat up.  Cook as directed.  DO NOT put the cold dish into a heated oven or the dish can break.

Serve this with fresh fruit and yogurt for a well rounded breakfast. It’s also great with a sriracha bloody Mary and baked french toast for dessert.

TIP FOR OVERNIGHT GUESTS: Prepare this casserole, cover with foil, and place in refrigerator over night. Leave a sticky note with directions, on top of the casserole so whoever wakes up first can put it in the oven.

Easy Breakfast Casserole Recipe

Total Time: 1 hour 10 minutes

Prepare this easy breakfast casserole for brunch entertaining or for weekends with the family. It goes together quickly and can be made ahead and baked later.

Ingredients

  • 4 cups frozen shredded hash browns, thawed
  • 2 Tablespoons dried onion flakes
  • 1 package Canadian bacon slices {about 8 slices}, diced
  • 1 cup shredded sharp cheddar cheese
  • 1 can (12-ounce) fat free Evaporated Milk
  • 1 large egg
  • 1 1/2 teaspoons Ranch Dressing & Seasoning Mix (from 0.4-ounce packet)
  • Nonstick cooking spray

Instructions

  1. Preheat oven to 350 degrees. Spray a 9 x 11 baking dish with nonstick cooking spray (makes clean up a breeze).
  2. Layer 1/2 of the potatoes, 1/2 of the onion flakes, 1/2 the Canadian bacon, and 1/2 the cheese in the dish. 
  3. Repeat layers.
  4. In a small bowl combine Evaporated milk, egg, and seasoning mix. Pour over potato mixture and cover with aluminum foil.
  5. Bake for 55 to 60 minutes. Uncover and bake another 5 minutes.
  6. Let stand for 10 minutes before serving.

Notes

If you use cubed hash browns, you'll have to cook it covered for about 15 minutes longer.

  1. Do I have to use evaporated milk? Why evaporated milk? Can I substitute? Just wondering because I’ve never used that ingredient before and would like to try this casserole.

    1. Melissa, the EM makes the dish more creamy and rich. Regular milk has a higher water content that will not give you the same results.

  2. My go to dish is a cottage cheese cheesecake- more protein and less fat than cream cheese but it is just as rich you must try it!

  18. My go-to is my two potato saute. It’s so good. A combo of creamy potatoes, sweet potatoes, bacon, red pepper and cream. that is all. so delicious.
