  • Chopped pecans. Find small packages that are already chopped, in the baking aisle, to save time.
  • Green onions and lemon juice.

Serve this chicken artichoke cheese spread for ladies night, holiday parties, or happy hour. This party appetizer can be made ahead for easy entertaining. Double the recipe and freeze half for 2-3 months.

Ingredients

  • 1 (12.5-ounce) can premium chunk chicken breast meat or 1 1/2 cups cooked chicken breast meat
  • 1 block (8-ounce) light or regular cream cheese, softened at room temperature
  • 1 cup shredded Parmesan cheese
  • Half of a 14-ounce can artichoke hearts, drained and finely chopped
  • 1/2 cup finely chopped pecans, lightly toasted
  • 2 green onions, minced
  • 1/2 Tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black ground pepper

Dippers

  • Club crackers, Ritz crackers, water crackers
  • Crostini
  • Pretzel crisps
  • Pita chips
  • Celery sticks
  • Cucumber slices

Instructions

  1. Stir together all ingredients until well combined.
  2. Cover and chill 6 to 8 hours or overnight.
  3. Serve with crackers or baguette slices.

Notes

This recipe can easily be double for a large crowd, or you can divide it and freeze it in appropriate portion sizes.

Add 2 tablespoons of milk or mayonnaise to thin out the consistency if desired.
