Easy Sparkling Wine Jello Shots

I have the most festive recipe that’s perfect for your New Years Eve party. It’s champagne jello squares! This is my version of a recipe I saw on the Food Network a few years ago.

I made this for our annual Christmas cocktail party and it was a big hit! A few times during the party I circulated with a tray in hand and let guests grab a square (or 3) for a fun and festive touch to the night.

Serve them on a New Years Eve late night party buffet or add them to a bubbly bar.

Why You’ll Love Them

  • What I love about these little squares is that they’re a whimsical but elevated approach to traditional jello shooters. And the color is light gold so it looks pretty in a more sophisticated party atmosphere.
  • If you’ve had a traditional jello shot then you know how difficult it can be to get it out of those little cups. With these, you can serve them as individual squares on a tray, or in mini martini glasses like I’ve done here.
  • A little raspberry liqueur in the recipe is giving these a kir royale cocktail vibe.

Best Champagne for Jello Shots

As usual, we use the term “champagne” as a blanket term to cover any sparkling wine like Cava or Prosecco. With that in mind I suggest using the less expensive options.

Since this recipes calls for adding sugar to the plain gelatin, use a Brut or extra dry bubbly. Anything else can render these too sweet.

How to make Champagne Jello

 What you’ll need:

  • Plain gelatin. This is what gives jello it’s structure. You can find it with the other flavored jello mixes.
  • Sugar. Use granulated white sugar.
  • Prosecco, Cava, Champagne. Use any sparkling wine, preferably Brut or Dry.
  • Club Soda or sparkling mineral water. It helps with flavor and adds effervescence.
  • Chambord liqueur. It gives a hint of sweet fruity flavor. You can also try it with Crรจme de cassis.

What you’ll do:

  1. You will prepare the gelatin and combine with the sugar.
  2. You MUST let it cool to the touch before adding the champagne or else the alcohol can burn off. Once it’s cooled down add the sparkling wine, club soda, and liqueur.
  3. Pour mixture into a large baking dish, cover and refrigerate for several hours or over night to set.
  4. Cut jello into bite-sized squares and serve.

HOSTESS TIP: Use a small spatula to help lift jello off the bottom of the baking dish, gently.

I hope you give these a try at your next adult celebration. It’s a great way to toast with a twist.

EXPERT TIP: Make these up to 24 hours in advance and keep refrigerated until party time.

Fancy New Year’s Eve Jello Shots

You should definitely add these to your New Years Eve celebration. The gold color makes them look elegant and festive. These are not your frat party shots!

  • I like to make them in a baking dish so I can cut the jello into small bite size squares. Then you can put them in mini martini glasses like you see here. Fun for a golden glam dinner party too.
  • You can also fill shot glasses with the tiny squares.
  • Place small cubes on a tray individually, and pass them around to guests like they do at weddings and events.
  • For a completely different take, you can pour the mixture into silicone molds. This works great for a themed look.

You can think of these as a “cocktail” or as a dessert option. Either way these champagne jello shots are a welcome treat. See more tips here.

    1. Hi Tracy; seltzer water should be just fine as a substitute for the club soda. Enjoy!
