My husband and I recently had a happy hour date at Bonefish Grill and one of the items we ordered was blue cheese & balsamic potato chips. They were DELICIOUS – who knew? I was just telling someone the other day that I’m not a junk food junkie… but I AM a chip junkie! While other party planners are focused on the sweets tables & desserts, I’m over here thinking about the savory items & appetizers, and there’s no better savory, salty item than chips.

I decided to re-create that appetizer for us during the season premier of Mad Men, so I started with our favorite bag of chips – Kettle brand chips – and topped them in the same way as the restaurant. If you’re a chip lover too, I highly recommend this dish for a family snack or an appetizer for entertaining.

We’ve been buying Kettle brand chips for years and I even used the crinkle cut ones in these chocolate drizzled potato chips, plus I’ve served them at casual get-togethers alongside m&m’s for a sweet & savory combo. I also feel good about using them since they’re the first chip to be certified as a non GMO product {that means they don’t use genetically engineered ingredients}.

Blue Cheese & Balsamic Kettle Chips

  • Kettle brand potato chips with sea salt
  • Crumbled Blue Cheese
  • Balsamic vinegar
  • Ranch or blue cheese dressing
  • Bacon, cooked and crumbled
  • Green onion, chopped

Arrange potato chips on an oven safe dish, and drizzle LIGHTLY with dressing, and sprinkle on blue cheese. Warm in oven {at 350} for about 3-4 minutes, or microwave for about 10 seconds.

Remove dish and drizzle with balsamic vinegar. Sprinkle with bacon and green onions and serve.

The balsamic vinegar adds such a great flavor to the chips and when it mixes with the ranch or blue cheese dressing it’s a marriage made in heaven.

As I mentioned above, I’ve literally been choosing Kettle brand chips for years.  Using GNO products in food is a hot topic right now and you can feel good about choosing these made with REAL ingredients.
