Rich & Creamy Easy Ice Cream Recipe

rich and creamy easy ice cream

When I was a kid growing up in the country {yep, surrounded by fields} my dad used to make homemade ice cream on summer weekends as we gathered with family and friends. I remember that old hand-cranked ice cream maker, before we finally bought an electric one, and his favorite flavor to make was banana. Once it was all ready, we would serve it up and eat it from Styrofoam cups.

Now that I’m grown I haven’t had homemade ice cream in…decades(?)! I’ve never bought an ice cream maker because it’s just something else I’d have to store most of the time. I’ve recently heard of how you can make homemade ice cream using frozen bananas and was intrigued. I already use frozen bananas in my smoothies so it makes total sense. So I did some research and came up with my own recipe using only 4 ingredients.

I’ll be teaming up with International Delight for the remainder of the year to share ideas on entertaining and lifestyle, so I used it as a flavoring for my ice cream. I already use it every day in my coffee so that was convenient!

First let me tell you about the flavor of this ice cream. Even though it’s made with frozen bananas, the banana flavor is subtle in the end. The 4 ingredients used provide a depth of flavor that is rich and delicious, and the texture is surprisingly creamy! I have to say I’m pretty amazed with how well it turned out, and without any fancy equipment outside a blender. I’m calling this my Rich & Creamy Easy Ice Cream!

Rich & Creamy Easy Ice Cream

  • 3 very ripe bananas, cut into 1 inch chunks & frozen
  • 1/2 cup plain Greek yogurt
  • 1/4 cup almond butter
  • 1/3 cup International Delight creamer {I used Cold Stone Creamery Churro Caramel flavor}

Freeze bananas over night.

Put bananas in a blender and puree. You will probably need to stop the blender and work the bananas in order to get them all pureed.

Add yogurt and blend. Add almond butter and blend until smooth.

Transfer mixture to a bowl and stir in creamer until well combined.

Cover and freeze for at least 3 hours. Scoop into bowls when ready to serve.

Makes 4 servings.

One thing interesting I noticed about this ice cream too, is that it’s filling. Because there are so many healthy ingredients – fiber from the bananas & almond butter, and protein from the Greek yogurt & almond butter – it’s a filling and indulgent treat with a healthy twist.
