CHICKEN-SLAW SALAD WITH PEANUT DRESSING

I hope you all had a great weekend! Mine was fantastic and one I’ve been looking forward to for a couple of months. My bff from college came for an overnight stay on Friday and we sat outside chatting for about 7 hours straight! Time flies when you’re having fun….and catching up over wine and snacks.

Before we headed outdoors to talk about everything under the son, I made this chicken-slaw salad with peanut dressing for us to have for lunch. I was inspired by this one I found, but changed it up a bit to suit my needs. This dish was out of this world, and healthy too!

Made with lots of crunchy vegetables, baked chicken breast, and a delicious peanutty dressing, this slaw-salad fusion is the perfect choice for ladies who lunch. It’s a well rounded dish on its own – just add some French bread on the side for a hearty addition. Pin this recipe for all your summer gatherings.

Chicken-Slaw Salad with Peanut Dressing

  • 1 bag {16 oz} tri-color slaw mix
  • 2 small chicken breasts, skinned and cooked {baked, roasted, or boiled}
  • 1 red pepper, very thinly sliced {julienne style}
  • 1 cup julienne cut carrots
  • 2 green onions, sliced thin
  • 1 avocado
  • 1 mango
  • fresh cilantro, rough chopped
  • 1/2 cup dry roasted peanuts

Dressing:

  • 1/2 cup smooth peanut butter
  • 3 Tablespoons extra virgin olive oil
  • 2 Tablespoons rice wine vinegar
  • 2 Tablespoons soy sauce
  • 2 Tablespoons honey
  • 1/4 teaspoon sesame oil
  • juice of 1 lime
  • 1/2 teaspoon red pepper flakes

To prepare salad, combine slaw, carrots, red pepper, and green onion. Cut chicken into bite size pieces and add to salad.

Pour dressing over mixture and combine well. Cover and refrigerate for at least 2 hours.

Prior to serving, dice avocado and mango and fold into salad {squeeze fresh lemon juice over diced avocado to keep it from browning}.

Fold in peanuts, and cilantro to taste, and serve.

To make dressing, combine all ingredients with a whisk until smooth.

As I mentioned, this is a super dish to serve at a ladies luncheon. Think bridal and baby showers, or spa day, etc.

Most of the work can be done ahead of time. I made mine the night before and added the avocado, mango, nuts, & cilantro just before serving. I hope you’ll give it a try.
