This weekend was a lot of fun. Saturday we attended a neighborhood Cinco de Mayo party complete with taco bar, tequila bar, a shot ski, and pinata filled with mini bottles of liquor! Yes, our neighbors are both liquor sales reps and they KNOW how to put on a party – such fun!

Friday night was family night and we grilled out these delicious bbq salmon fillets. I partnered with KC Masterpiece® in honor of their 35th anniversary, and created a sauce using their limited edition Kansas City Classic blend. The sauce on it’s own has a tangy, smoky flavor and the additions we made seemed to bring out the sweetness and add a little zing.

We recently started using these grilling planks to cook salmon on the grill. They make such a difference in flavor and texture compared to cooking in the oven. Use my recipe below and get some grilling planks to try out. You won’t be sorry.

BBQ Brushed Salmon

  • 1/2 cup KC Masterpiece® Kansas City Classic bbq sauce
  • 1 1/2 teaspoon Sriracha
  • 1/2 teaspoon fresh squeezed lemon juice
  • 1 garlic clove, minced
  • 4 to 6 – salmon fillets {our fillets were about 6 oz. each}

Combine sauce ingredients together and set aside.

Prepare grilling planks by soaking in water for about an hour.

Pre-heat grill to medium-high heat or 350 degrees. Place empty planks on hot grill for 5 minutes to heat up. Flip the planks over just before adding the salmon.

Prepare salmon by removing skin and seasoning with salt and pepper as desired. Add salmon on top of planks, close grill lid, and cook for about 10 minutes.

After the 10 minutes, brush bbq sauce all over the salmon and continue to cook for another 10 minutes, or until fish begins to flake and internal temperature is 135 degrees.

The salmon turned out so good, and I served it with pasta salad and Southern slaw.
