Beer-Cheese Spread

Last weekend our neighborhood ended up having a last minute surprise birthday party for one of our gals. We got the group text on Friday night and by Saturday night we had an all-out German themed party.  Our friend is originally from Germany so the plan was for everyone to bring a “German” dish to share. Some of the first items to be spoken for were brats and sauerkraut, German potato salad, pretzels, German chocolate cake, and of course, German beer.

I did a quick Google search for German appetizers and found a beer cheese spread that I made a couple of changes to. Even though it’s supposed to sit overnight I only had 6 hours! It ended up being delicious anyway, and this was one thing the guys particularly loved. One friend even spread it on his bratwurst bun!

Here’s the version I made, below. You’re going to need your food processor for this one.  There was definitely a mellowing of flavors after sitting over night {I saved some so I could take photos and share the recipe}, and it needs to be at room temperature when you spread it so it goes on smoother and easier.

Beer Cheese Spread

  • 8 oz White cheddar
  • 8 oz Swiss cheese
  • 1/2 cup German beer {I used St. Pauli Girl}
  • 1 Garlic clove, minced
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon Dry mustard

Using a food processor, shred each of the cheeses. Change out the shredding attachment for the mixing attachment and pulse together the cheeses, garlic, dry mustard, and Worcestershire sauce, until combined.

Add beer and processes until smooth, about 2 minutes.

Transfer cheese spread to ramekins, cover, and refrigerate over night {or at least 6 hours}.

Bring cheese spread to room temperature for easier spreading. Use with wheat club crackers, pretzels, or pumpernickel or rye bread.

I think this recipe lends itself to lots of customization. For instance you can use different cheeses for a totally different flavor, and you can use dark beer for more robustness. I served it with wheat club crackers, which were terrific with it. We also had soft pretzels which I would recommend as well.

Serve this up for football games or ‘guys night in’ because it was certainly a winner among the men.
