Even though I work from home and as such, not effected by “snow days,” I felt compelled to take some time off yesterday to make the day a little more special for the family. But before all the fun I put on a crock pot of my turkey vegetable soup and I’m sharing the recipe below. This soup is healthy and delicious, and because it’s make in the slow cooker it’s easy too – perfect for snow days!
We enjoy is with some good crusty bread and a glass of wine for the hubs and me.
Slow Cooker Turkey Vegetable Soup
- 20 oz ground turkey, crumbled and cooked
- 1 can (14.5 oz) vegetable broth
- 2 cups water
- 1 can diced Fire Roasted tomatoes with juice
- 1 packet onion soup mix
- 16 oz bag frozen mixed vegetables (green beans, carrots, & corn blend)
- 1 can white beans, drained and rinsed
Combine all ingredients in slow cooker and cook on low for 8-10 hours, or high for 5-6 hours.
Makes 5-6 servings.
My kids are at that really cool age where they’re lots of fun to hang out with, AND they actually want us to hang out with them. It was the perfect scenario – we had a few inches of snow, my husband was home from work, the kids have neighbors their age to play with, and we have a fantastic hill at the end of our driveway to sled down! I decided to get in on the action and take a few runs myself – they LOVED that!…truth be told, so did I! Below, I took some snapshots of our snow day “day o’ fun.” When the kids needed a break they came in for hot cocoa from my hot cocoa bar, and later in the day I made hot molten cupcakes.
We ended the day with a fire in the fireplace and a hot bowl of soup. Dad and I enjoyed a glass of wine and we all watched The Middle together. It was as close to a perfect day as I could hope for, and part of my new years resolution is to take time away from work in order to enjoy it with the family. In this job I literally LIVE the blog which I’m so grateful for, but sometimes find it hard to turn ‘off’. This year and beyond I want to enjoy all these moments with the family before the kids are full on teenagers and hiding out in their rooms all the time….or worse – away at college!
