Lightened Up Apple-Berry Galette

Was your new years resolution to eat “better,” but you still have a sweet tooth?  If I didn’t work with food a lot in my job I wouldn’t eat as many sweets – in fact, how do food bloggers in general, stay slim or fit??  Admittedly my kryptonite is savory appetizers, but I do love to make a great dessert once in a while for the family or for entertaining.  And since I’m always trying to balance clean eating with….”fun” eating, I made this apple-berry galette using Truvia® natural sweetener instead of regular sugar.

I was beyond happy with the result.  For one thing it makes a beautiful rustic presentation and can be served with brunch or for dessert.  It’s also full of fruit and uses 1 pie shell {dough} instead of two, so it’s reduced calories too!

The recipe is from the Truvia® brand site and I made a couple of alterations due to our specific tastes.  I substituted raspberries for the blackberries because we like them better, I used the Truvia® baking blend instead of spoonable, and I didn’t use the butter…on the second round.  The truth is, I first made a galette following their direction to a tee {except for the raspberries} and found that the addition of the butter was unneccessary.  Also, their original cooking time was nearly an hour!  Far too long and my fruit became mush.

My second go around I cooked it for about 30 minutes and the fruit came out soft but not macerated, and the taste was fantastic.

Lightened Apple-Berry Galette

  • 3 cups apples, peeled
  • 1 tsp fresh lemon zest
  • 1 Tbsp fresh lemon juice
  • 1 cup fresh strawberries, sliced
  • 1 cup blueberries, fresh or frozen
  • 1 cup blackberries, fresh or frozen
  • 1⁄4 tsp salt
  • 1 tsp cinnamon, ground
  • 2 Tbsp cornstarch
  • 1⁄3 cup Truvía® natural sweetener spoonable
  • 1 refrigerator pie crust
  • 2 tablespoons butter

Preheat oven to 425° F.

Thinly slice apples; place in bowl, top with lemon zest and juice; set aside.

In large mixing bowl, place strawberries, blueberries, blackberries, salt, cinnamon, cornstarch and Truvía® natural sweetener; blend together and set aside.

Place pie crust dough on lightly floured surface and roll out; transfer to parchment-lined sheet pan. Gently combine apple and berry mixtures.

Place fruit mixture into center of pie crust; leaving 11⁄2 inch border around edge of crust; place butter pats on fruit filling. Flip up crust edge towards middle, pleating as you fold up.

Bake for 30-35 minutes; rotate 180° half way through baking. Cool on wire rack; serve warm or at room temperature.

Besides making lighter recipes like this to live a healthier new year, I’m resolving to get back into exercise regularly.  It’s time to combat gravity!

I loved the information at the end: I live in France and can confirm that they definitely love their food (and the social aspect of eating), even if workplace canteens and schools are required by government regulations to serve a devastatingly healthy menu. I think its really their attitude of appreciation of food which saves them, though, even with all the enforced health measures in place.
