Easy Pecan Pie Bars with Sugar Cookie Crust

Last weekend started the holiday season with a bang with our ladies night gift exchange on Friday and our neighborhood Toys for Tots collection party on Saturday.  The TFT party was held at a church close by, and it was ‘open house’ style from 5-7.  Volunteers brought cookies and other baked goods to share, and I made these easy Pecan Pie Bars with Sugar Cookie Crust.

I got a little help from my friends at Betty Crocker {General Mills} as they sent me a baking kit with information on hosting a Toys for Tots collection party.  I think collecting toys for Toys for Tots is one of the sweetest acts of kindness during the holidays and it’s so easy for anyone to pick up an extra toy or two while they’re already out shopping for other gifts.  If you get a chance to participate or host a collection party, please do!

Now, let me share my recipe which started with the Betty Crocker sugar cookie mix I received, which made making the crust so easy.

Easy Pecan Pie Bars with Sugar Cookie Crust

Crust:

  • 1 pouch (1 lb 1.5 oz) Betty Crocker® sugar cookie mix
  • 1/2 cup butter or margarine, softened
  • 1 egg

Filling:

  • 1 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 eggs
  • 1 1/2 cups chopped pecans

Heat oven to 350°F. Spray bottom of 13×9-inch pan with cooking spray.

In large bowl, stir all Crust ingredients until dough forms. Press dough in bottom of pan using floured fingers. Bake 20 minutes.

Meanwhile, in medium bowl, stir all Pecan Filling ingredients until well blended. Pour over hot crust.

Bake 15 minutes or until center is set. Cool completely, about 2 hours before cutting.

Store covered in refrigerator.

I went on the Betty Crocker site and looked up recipes that used the sugar cookie crust.  This one stood out to me because it was perfectly suited to the holiday and I had all the ingredients on hand already!  The bars were delicious and I hope you’ll give them a try.

We collected at least 2 boxes full of toys, ate yummy treats, listened to live Christmas music, and even saw Santa!

  17. One cookie we always bring when we go to someones house is oatmeal scotchies. People think it will just be a plain old oatmeal cookie until they taste those butterscotch morsels. Then they can’t have enough.
