What’s your favorite place to get inspiration for recipes? Obviously I love to find them online, but I also LOVE to get them from books and magazines too. That way I can set it on the counter while I’m working, make notes on the pages after I’ve tasted, and even cut out the page to put into my binder of collected recipes {I have 4 full ones as it stands now}.

I picked up the July issue of All You magazine at my Food Lion store, and was inspired to make this veggie pesto pasta salad, which is great for all those summer potluck parties.  All You is one of those magazines I’ve been grabbing at the checkout for years because it’s full of tidbits of information, recipes, and coupons.  I’m happy to let you know that it’s now available at many more retail outlets.  Inside was a grilled veggie pesto pasta salad that looked and sounded yummy.  I decided to make it my self, but with a few tweaks to fit our lifestyle…

Veggie Pesto Pasta Salad

  • 3 cups Whole Grain Pasta {spirals, farfalle, elbows, or penne}, cooked
  • 1 each red and yellow bell pepper
  • 15 oz can cannellini beans, drained and rinsed
  • 7 oz. jar prepared pesto
  • 1/2 cup shredded Parmesan cheese
  • 1 Tablespoon Olive oil

Cut peppers into strips and toss with olive oil until lightly covered. Saute peppers over medium heat for about 5 minutes until tender, but not soft.

Add peppers to cooked pasta, along with beans and pesto. Toss to combine well.

Stir in cheese, cover and refrigerate at least 2 hours before serving so flavors can marry.

I love pesto so I loved this pasta salad.   Since we’re moving in 2 weeks we’ve gotten rid of our old grill so no summer grilling for us.  Instead I sauteed the peppers and that worked perfectly well for this.  I enjoyed the addition of beans because a bit of protein is great to balance out the nutritional value – you could also add cooked chicken if you like.
