Stuffed Cherry Tomatoes

Over the years I’ve experimented with a LOT of party recipes. Some were winners and some…not so much. I remember making these stuffed cherry tomatoes for the first time for one of our annual cocktail parties. I’m almost surprised at how popular they were! I think its the ease of eating ‘crudite’ without having to go to the extra effort of dipping it – it’s an all-in-one bite.

I’m sharing the recipe for the cucumber-benedictine stuffing below.  Tomatoes and cucumbers are a marriage made in heaven and perfect for summer entertaining.  During your next gathering try putting these out instead of a veggie tray and see how it goes. And keep in mind you can also stuff celery and cucumber cups too!

Cherry Tomatoes stuffed with Benedictine Dip

  • 1 pint cherry tomatoes
  • 8 ounces cream cheese at room temperature
  • 1 cucumber, peeled and grated
  • About 1/4 of a medium size onion, grated
  • 1 Tablespoon mayonnaise
  • 1/2 teaspoon salt
  • Pinch of cayenne pepper

Drain all the moisture out of the grated cucumber and pat dry with a paper towel. Do the same with the onion.

Combine all ingredients {except tomatoes} in a bowl and mix well. Cover and refrigerate a couple of hours or over night so flavors can marry.

Meanwhile, cut cherry tomatoes in half and scoop out the inside using a small spoon. Turn them upside down on a paper towel to drain for 15 minutes.

Cut a tiny section off the bottom of the tomato so it has a flat base to sit on. Fill tomatoes with benedictine dip and serve {garnish with dill if you like}.

TIP: This mixture can also be used as a dip for crackers & veggies, or spread on sandwich bread for tea sandwiches.
