Chocolate Fudge Caramel Cake

Every day I wake up and have 3 cups of coffee with my flavored coffee creamer in it, and I’ve always heard you can use flavored creamer in baking to add a little flavor, but hadn’t tried it my self….until now! I decided this is the perfect time of year to make something sweet for my sweetheart, and International Delight Caramel Macchiato was the flavor of choice this week.  Chocolate and caramel was sounding really good, Mmmmm.

The timing worked out so I could use half the batter for my daughter’s birthday cupcakes, and the other half to make a mini bundt cake perfect for a Valentine’s dessert table for two.

I know there are die-hards out there who ONLY bake from scratch, but as a busy mom, wife, and business woman who needs to cut corners wherever she can, I LOVE the convenience of starting with a boxed cake mix for ‘every day’ baking. I usually save the flour & sugar measuring for holidays or big occasions.

Chocolate Fudge Caramel Cake

  • 1 package Chocolate Fudge Cake Mix
  • 1 1/3 cup International Delight Caramel Macchiato creamer
  • 1/2 cup vegetable oil
  • 3 eggs

Mix ingredients with a mixer on low for 30 seconds. Increase speed to medium and mix for 2 minutes.

Pour batter into a bundt pan that’s been sprayed well with non stick spray.

Bake at 350 for 35 minutes, or until cake is done {toothpick inserted into the middle comes out clean}.

NOTE: For a smaller “cake for two,” pour half the batter into the bundt pan and bake 30 minutes. Cook remaining batter in cupcake pan or cake pan.


  • 1 cup powdered sugar
  • 3-4 Tablespoons International Delight Caramel Macchiato creamer
  • Caramel sauce (ice cream topping) – about 2 Tablespoons
  • Toffee bits if desired

Mix powdered sugar and ID creamer together until smooth. Pour over cooled cake.

Drizzle caramel sauce over cake, lightly, and sprinkle with toffee bits.

The cake turned out incredibly light and moist, with just a hint of the caramel macchiato flavor. I’d love to experiment with more International Delight flavors and cake flavor combinations – the possibilities are endless!
