Easy Appetizer: Chicken Artichoke Canapes

If you’re looking for a delicious hearty appetizer to serve for a cocktail party or pre-dinner nosh, these chicken artichoke canapes will fit the bill. I made these by combining my classic artichoke dip recipe with shredded chicken, and using it as a topper instead of a dip. Artichokes are one of my favorite ingredients to work with, and I love the results I got from adding the chicken.

Make these yummy toasts ahead of time and pop them in the oven as guests arrive. Serve them for the holidays during all that entertaining you’ll be doing, or at a ladies night gathering, or dinner party appetizer.

Chicken Artichoke Canapes

  • 1 cup artichokes, finely chopped {canned, not jarred in oil}
  • 1 cup cooked chicken breast, chopped {I find the canned chicken from Sam’s Club is of high quality, or you can use a rotisserie chicken, or boil your own}
  • 1 cup shredded Parmesan cheese
  • 1 cup mayonnaise
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon Tabasco
  • 1 French baguette, sliced

Preheat oven to 350 degrees.

Combine chopped chicken and artichokes with mayonnaise. Stir well.

Add cheese, garlic salt, and Tabasco and mix until well combined.

Spread a scoop of chicken mixture onto each bread slice and place on a baking sheet.

Bake for 7 – 10 minutes or until mixture is hot and cheese is melted.
