Summer Side Dish Recipes

This weekend is the official start to Summer, and I still can’t believe it {time is flying by!}.  Pools are opening, school is ending for many, and there will be backyard cookouts all over the country to celebrate the long weekend.

All those cookouts usually means pot luck side dishes to bring.  In fact the side dishes are my favorite part of the meal and I know I’m not alone.  That’s why I put together this roundup of dishes that are perfect for those summer pot luck bbq’s.  Gathered from several sites around the web, these are classic options that you definitely want to file away & refer to when needed.  Pick 1 or 2 you’d like to try and let us know how it goes.  Bon Appetite!

  1. Red Potato salad is as classic as it gets and it’s a nice hearty option that men go for.  This recipe from Skinny Taste is lightened up a bit but still has that creamy base & subtle crunch we love.
  2. Being from the South, I grew up eating fresh produce from the garden and cucumber salad was a Summer staple.  This creamy recipe from Canadian Living has dill & red onion added.
  3. Most outdoor parties I’ve hosted or been a guest at, always seem to have a Southwestern element in it whether it’s chips and salsa, margaritas, or a side salad like this one from Once Upon A Chef.  This would be great as a salad, a dip, or a relish. Yum!
  4. Just as classic as potato salad, pasta salad always makes an appearance as well.  This parmesan pasta salad from Angie’s Big Love of Food sounds heavenly.
  5. You can’t have a cookout with baked beans can you?  These blazin’ baked beans on All Recipes has a kick with the addition of chipotle chilies!
  6. Another great way to lighten up the sides and get some fiber in the meal is to include a crunchy broccoli salad.  I make a version similar to this one on Simply Recipes and I always bring home an empty bowl.

And for the main course, try our favorite Juicy Burger recipe or Asian Style burger recipe.

  2. I love side dishes & salads along with trying new recipes. I love a good potato salad, but that creamy cucumber looks amazing & cucumbers are my daughter’s fav. I did a round up of BBQ sauces & my fav. make ahead salad dressing. Drop by sometime & link yours up if you like.

    These pictures really make me want to make some of these! They look delicious. Since we have become vegans, picnic food has changed a little for us. But we still have potato salad (I make my own “mayonnaise” and baked beans (no meat of course.) It’s very doable and we really enjoy the tastes and flavors of what we eat.
